Crockpot Fiesta Chicken Tacos

We all love the idea of crockpot meals, but we tend to run out of ideas that are kid-approved. Tacos can be super fun for family dinners and easy peasy with this recipe!

I didn’t realize how much my kids love tacos, until we made these.  And I’ve said it before …when the kiddos help with the cooking, they’re more excited about trying and eating their food.

Taco assembly might be the most fun part, at least for the little ones. Line the table with toppings and shell options and let ’em create.  As long as they’ll eat it, it doesn’t matter how it looks on their plate.  Our options are usually: hard shell, soft shell, tortilla chips, lettuce, tomato, cheese, salsa, avocados and of course the chicken filling.

This chicken taco meat includes corn and beans.  You can skip them if you wish, but our kids love corn and beans. And they add some colorful nutrition.

If your kids don’t like tacos, try putting it over whole grain pasta or brown rice.  Better yet, try adding the rice or pasta into the crockpot with some water, for a fun new taco dish.

Chicken Fiesta Tacos

KID SKILL LEVEL TASKS

Every child’s ability varies depending on maturity or cognitive and physical ability.  Parents need to use their own discretion when assigning tasks.  These are general guidelines for the Fiesta Chicken Tacos.

18 months – 3 years old:

  • Name and count ingredients with child
  • Pour ingredients into crockpot
  • Press start button on crockpot

3 – 5 years old

  • All of the younger tasks
  • Measure and count ingredients
  • Dice tomatoes and any other toppings using a kid-friendly knife

6 – 7 years old

8 – 12 years old

  • All of the younger tasks
  • Use grater to shred cheese, if using brick cheese

FRIENDLY REMINDERS:

  • Wash everyone’s hands!
  • Clean all work surfaces before starting.
  • Leave tasting until the end. Your child might not understand the difference between a ready-to-eat ingredient and a raw unsafe ingredient.
  • It is okay for your kitchen to get a little messy.
  • Keep in mind that your child is learning, so patience is key!

Ingredients
  • 1 ½ pound chicken breast, frozen
  • ½ lb (8oz) corn, frozen
  • ½ lb (8oz) black beans, canned, rinsed
  • 1 jar salsa
  • ¼ tsp onion powder
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • 1 tsp cumin, ground
  • 1 tsp pepper
  • ¼ tsp salt
Instructions
  1. Add all ingredients into crockpot.
  2. Cover and cook on high for 2-3 hours of low for 6-8 hours.
  3. Remove chicken from crockpot and shred with a fork. Place shredded chicken back into the crockpot and mix together.
  4. You are ready to build your tacos. Arrange your table with your favorite shells and toppings.
Notes
Tip: For a fun twist, try adding whole grain pasta or brown rice to the crockpot with some water. It turns your taco meat into a great new dish.
